Byington Winery

California, the most populous state of the United States, located on the Pacific coast of North America is the home of and wine producing regions such as Santa Barbara and Northern California's Wine Country.

Byington Winery is located in Silicon Valley, rejuvenating destination in the Santa Cruz Mountains. The winery was established in 1987 by entrepreneur Bill Byington. Byington winery manufactures white wines, red wines and rose wines. In white wine there is a different type of wine like Chardonnay wine made in 2004 at Santa Cruz Mountains. This is a classic Santa Cruz Mountains Chardonnay with ripe apples, crisp minerality, a hint of lemon zest and a lively acid finish. Liage wine included  80 percent Sauvignon Blanc from Ventana Vineyards, with 20 percent Viogner from the Edna Valley. It has a refreshing mouth feel that lingers on the palate slowly fading away with a balanced acid finish.

Red Wine, which was made in Sonoma County, 2002 is a blend of 80 percent of Cabernet Sauvignon, 11 percent Cabernet Franc and 9 percent Syrah. It has a well integrated aroma with notes of cedar, ripe plums and annisette and a subtle herbal note. Cabernet Sauvignon, which made Bates Ranch, Ripe blackberry and boysenberry, notes with a heady hint of dried herbs, resolves to an earthy, leathery finish. Cabernet Sauvignon wine made in Tarman Ranch Vineyard is full bodied with plenty of flavor to spare. The aroma is that of mushroom and forest floor.

Cabernet Sauvignon wine made in Whalebone starts off boldly with aromas of port and cherry. The palate, ripe with big tannins resolves into cranberry fruits with a hint of coffee. Merlot wine, which was made in Messina, is all sweet oak and luscious plums with a lingering French roast coffee finish.

Pinot Noir wine which, was made in Estate Vineyard has a bright bing cherry fruit smell. The strong acid backbone makes this wine a delight to pair with a broad range of foods.  Zinfandel wine which was made in Hastings Ranch is rich with deep, intense black currant and black cherry fruits. It has a spicy undertone and the cocoa powder finish which makes it a perfect match for chocolate of all types. In rose flavour Rose Saignee wine made in Santa Barbara County has a fresh and fruity smell. It is still actively involved in the day to day operations of the winery.
