Zenaida Cellars

California, the most populous state of the United States, located on the Pacific coast of North America is bordered by Oregon, Nevada, Arizona and Mexico. California is also the home of wine producing regions such as Santa Barbara and Northern California's Wine Country.

Zenaida Cellars is one of the California’s leading wineries that has grown through excellence and quality of wines offered. Located in the Templeton Gap area, west of Paso Robles, at the base of the Santa Lucia Coastal Range, Zenaida Cellars was founded by Eric Ogorsolka who  has been growing and making wine since 1994. In 1998, Eric began work on the winery and soon launched the Zenaida Cellars label.

The 95 acre estate vineyards of Zenaida Cellars consist of 65 acres rolling vineyard, with the remaining areas being primarily oak woodland and open space. Utilizing the same low impact philosophy in the vineyard and the winery, Eric maintains that great wines are made in the vineyard.

All vineyard and winery operations of Zenaida Cellars are consistent with sustainable theme. The vineyards are farmed using sustainable practices leaving a gentle imprint on the land and have received several certifications, an endorsement that Zenaida Cellars is in accordance with the preservation of natural resources. On the other hand, their winemaking team is a fusion of seasoned veterans and innovative students of enology and viticulture.

Zenaida Cellars’ wines are made using only the highest quality fruit from their estate vineyards. The vines are scrupulously preened and thinned to ensure even ripeness throughout. At harvest, the fruit is hand picked and brought into the winery in the cool of the morning. These fruits are then processed without the use of pumps or augers, thus eliminating excess handling. The grapes are de-stemmed, not crushed, and then fall directly into small fermenting bins. The bins are then wheeled into the winery to settle and start the fermentation process. The fermenting must is mixed twice daily to ensure superior color, structure, and balance of the finished wine.

Winemaking at Zenaida Cellars in Templeton Gap area is a dynamic process where diversity is created by tailoring vinification and cellar practices to the individual vineyard lots. Nevertheless, there is a crucial process that defines their idealistic approach and establishes a reference for maneuvers exclusively suited to each fermentation lot.
